Spring Forward With Intention!

We're feeling quite happy to be in the season of refresh and renew.
As your energy for the season awakens in the extra light of day, stay healthy and move forward with these tips from the Portland Coaching Collective.

In this posting:

A 3 pronged approach to mindfully moving forward,
without a plotted course.


ONE~
Day dream.   Cultivate strong vivid visions of the life that you desire.  Allow yourself to feel into all the details of these visions and live in them, noticing what it is for all of your senses to be in the visions of your life.  When you let yourself feel the life you want, you set your whole being up to be ready to find and receive it. 

TWO~
Work daily to be in your most open and curious self.  Always ask yourself, even in the tough challenging experiences, what is the opportunity here? What am I resisting? How is that interesting?  How could I be more open? Getting curious about what and why you resist and noticing in a non-judgmental fashion the meaning you make from your challenges.  As you live this way, you invite the spirit of growth and opportunity in all that you do.

THREE~
Consciously collect experiences, new understandings and skills, to grow your awareness.  As your awareness grows, so also may you create and shape or reshape your beliefs into the beliefs that support your vision. 
Take mindful inventory often, asking; how is this moment? How am I feeling? And what do I wish for?  Be inclusive of all of yourself and acknowledge every longing even those on which you may not act.  Acknowledgement only is potent and powerful, as we all desire to have our wishes seen and heard and from who better then ourselves.  Then, ask yourself; how do I want to grow? What do I want to know? And whenever possible, seek out the experience that can provide this learning.  As you go along, putting these skills, new understandings and experiences in your 'pocket', you are equipping yourself for living that envisioned life.

When you move through your life in this way, you operate from the inspiration of a strong vision.  And, as you take in opportunity every step of the way, in your openness and collecting of skills and experiences, you ready yourself for when timing also aligns.  Then, when game changing opportunities cross your path, you'll recognize 'a fit' with your vision with confidence and step into action more easily, as you've already sensed what it is to live this life through your visioning.

Roasted Chicken with Garlic, Lemon & Rosemary

With the spring weather switching ever time you blink, it is easy to go from feeling alive and energetic to chilly, tired, and low energy just as quickly.  Roasted organic chicken with garlic, lemon and rosemary, is the perfect solution!  Not only does the aroma cheer and motivate, the taste combination is exactly what we're needing! 
 
~Garlic is known for it’s immunity-boosting properties, and it is also good for circulation, helps maintain proper digestion and it is good for fighting fatigue.
 
~Rosemary has been used as an antiseptic, antidepressant, analgesic, antiviral, anti-inflammatory, disinfectant, aphrodisiac, and expectorant.
 
~Lemons are a powerful healing fruit that contain phenomenal antibiotic, antiseptic, and anti-cancer properties. Lemons are rich in vitamins C and B-complex and minerals such as iron, calcium, magnesium, silicon, copper, and potassium.

When you combine these and other ingredients, it’s not only mouth-watering and aromatic, it truly is comforting to whatever ails us, be it digestion, fighting a virus or battling the gray season blues. 
 
Chicken with Garlic, Lemon and Rosemary
Adapted from "The New Basics" by Julee Rosso and Sheila Lukins

2 heads garlic
1 large onion
1 roasting chicken
salt and pepper
1 lemon quartered
6 sprigs rosemary
olive oil
1 cup chicken stock
 
~Remove the paper-like outer skin from the garlic, and separate the cloves. Do not peel them. Set aside. Cut the onion in half and them into slivers. Set aside.
 
~Rinse the chicken well and pat it dry with paper towel. Place the lemon and rosemary sprigs in the cavity. Tie legs together. Preheat oven to 350 F.
 
~Put garlic and slivered onion in a roasting pan. Place the chicken on top. Add stock to the pan. Drizzle olive oil over chicken. Cover the pan with foil and bake for 30 minutes. Remove from oven, remove the foil, stir the onions and garlic in the stock and baste the chicken. Bake uncovered for another hour, basting with pan juices every 15 minutes.
 
~Remove the chicken from the pan. Discard the lemon and rosemary and slice the chicken. Serve it with garlic cloves, onions and pan juices. The garlic cloves will be very soft and sweet, and squeeze out like a paste to smear on your chicken. Mmmmmm.
 

This recipe is one of the first recipes I learned and mastered as a young adult, so recreating that aroma brings back very fond memories.  I serve it with roasted purple potatoes (did you know they have higher amounts of antioxidants per pound than blueberries?!), mashed cauliflower and a green salad.  What a memorable and comforting meal for the whole family, and continues to comfort with leftovers and bone broth you can make with the bones afterward.
